This is probably one of the simplest, cheapest and tastiest dishes. Perfect as a meal itself or as a side dish to something else.
I usually make double and keep some for lunch the next day. Delicious!
Ingredients:
1 tin of Butter Beans – drained well
Oil
Garlic
1 heaped teaspoon Black Olive Tapenade (or you can use finely diced/smashed black olives)
1 heaped teaspoon Harissa (or you can add some of your favourite hot sauce/chilli sauce)
2 heaped tablespoons of Totamto sauce, pasata or equivalent.
Greens of your choice. I love spinach, sugar snaps, asparagus tips
Optional fresh Basil
Method:
Heat a pan and add a dash of oil, the garlic, tapenade and harissa.
Sizzle for a few minutes.
Add the beans and heat until they are warm and start to break apart.
Add the greens, stirring occasionally.
Option to top with fresh basil and serve!
Serving suggestions:
Add cubed feta for more flavour and bulk
Serve as a side salad to your favourite main.
This is perfect hot or cold so make extra!
