These are a super tasty and not too unhealthy treat. Simple ingredients and packed with flavour the biggest challenge is not eating them all!
Naturally gluten free and low(ish!) in sugar they make a great snack or serve with some ice-cream or vanilla yogurt for a tasty dessert.
Ingredients:
Makes 12-15 cookies
150g of Rolled Oats
125g Oats blended into a coarse flour (if you don’t have a blender use rolled oats and it’ll just be a chunkier texture and more crumbly cookie)
120g real butter
75g brown sugar/coconut sugar
1 large egg (free range)
150g of 75% chocolate chopped into chunks
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon of Vanilla extract
Method:
Heat your oven to 180 degrees C (gas mark 4 / 350 degrees F)
In a small pan melt the butter and then add in the sugar stirring well. Take off the heat and set aside.
In a bowl mix the oats (flour and rolled), cinnamon, salt, chocolate chunks and baking soda.
Add in the butter/sugar mix and stir well. The mixture will be dry.
Beat one egg and add in making a crumbly and coarse mix.
Using slightly damp (and clean!) hands mould the mix into patties and press down slightly on a lined baking tray. They don’t expand too much and so just leave a small gap between each cookie. I try and tuck the chocolate chunks into the pattie so the chocolate doesn’t burn and it also leaves a nice chocolatey surprise when you bite into one!
Bake for 12-14 minutes checking every few minutes towards the end.
Allow them to cool on the tray before placing them on a wire rack to fully cool.
