Spinach is Shit!

Spinach is shit. Let’s face it, it really is. But it’s also the shit! All green leafy vegetables are. They are packed with more nutrients than you can shake a limp piece of spinach from the bottom of the bag at!

No one craves green leafy vegetables do they? It’s typically not people’s favourite food and so I’m always thinking of ways to jazz it up. Make it more appealing. Why? Because they are just so good for you.

My go to trick is to hide them. Hide the green leafy veggies in everything. And if you can’t hide them, cover them in something nice.

And so here I’ve compiled some recipes that have hidden gems so you can get your intake without even realising it.

But first let’s look at why they are so important:

Green leafy Vegetables include:

Spinach

Kale

Cabbage

Swiss Chard

Romaine Lettuce

Rocket

Bok Choy

and many more

 

Their benefits include:

  • High in fibre and low in calories
  • Rich in Vitamin C – for skin health and immunity
  • High in Iron and Folic Acid – red blood cell production and cell health, essential in pregnancy
  • Packed full of anti oxidants – which reduce the risk of diseases caused by oxidative stress
  • Vitamin K – essential for blood clotting, bone and heart health
  • Loaded with Potassium – regulates fluid balance and blood pressure, muscle contractions and nerve signals
  • And Manganese –  essential for metabolism of amino acids, cholesterol, glucose, and carbohydrates
  • They are superb at balancing the female reproductive hormones to aid in conditions such a PCOS, irregular bleeding and fertility issues.

And oh so many more benefits. But I’m guessing you don’t need much more convincing. So let’s get to the good stuff, the recipes:

Or just add this dressing to any of the above green leafy vegetables to make it a tasty and delicious side to any meal, even breakfast.

In a small bowl mix 2 teaspoons of tahini with 1 teaspoon of oil and 1 teaspoon of za’atar and mix well. Drizzle over your greens (as pictured below) and enjoy.
